Not just Extra Virgin Oil but Premium Olive Oil
Extra virgin olive oils are very different from refined grades of olive oil which are made using heat or chemicals. Extra virgin olive oil is like freshly pressed juice. Once harvested we quickly bring the olives to our local mill. Here the olives are separated from the twigs and leaves and are crushed into an olive paste. The paste is then ‘malaxed’ or relaxed by being moved around which encourages the oil to slowly separate from the paste.
All of this takes place without heating the oil which could compromise the flavour. The oil is then separated from any water using a centrifuge. What remains is extra virgin olive oil that is ‘unrefined’ and that has kept its natural nutrients.
Our oil has a life of 18 months after harvest. It should be kept in a dark cool place with the cap on.
So how about trying our oil drizzled over fresh bread oregano and feta cheese or mixing it with parsley lemon juice and garlic to produce a tasty dip? It’s also great over oven chicken with potatoes onions and garlic or simply the perfect topping over a tasty Greek Salad!
