Oven Baked Cod recipe by Chef Sebastian Scheer created for 220Trees Olive Oil!

This is a recipe recommended for a simple and quick but nonetheless very delicious meal. It removes the fuss of several pots and pans, plus you don't need to clean your cooker afterwards!
thick, chunky piece of cod fillet, 160-180g per person ,
fennel bulb thinly sliced,
fresh bay leaf
sweet organic oranges (juice and zest)
salt and pepper
220Trees Extra Virgin Olive Oil
Arrange the fennel, tomatoes, bay leaf and garlic at the bottom of an oven proof dish. Season the cod and place on top of the vegetables. Zest the orange, squeeze the juice over the fish and sprinkle the zest over as well. Season with some chilli according to your taste and drizzle everything with some olive oil, but not too much as you will use most of the oil after cooking in order to preserve all its flavor.
Place the dish in a preheated oven at 180 degree and bake for approximately 15-20 minutes. Remove the dish from the oven and allow to rest for 3-5 minutes. Sprinkle the finely chopped dill over all the ingredients and finish with a good dash of olive oil and a squeeze of lemon.
Boiled potatoes, oven roasted potatoes or some good quality crusty bread together with a simple leaf salad are the perfect accompaniment.
