Here served with potato salad
This is a popular summer dish with Greek families. Takes minimum preparation, is good value and undoubtedly nutritious.
INGREDIENTS (for 4 people)
1kg of fresh anchovies cleaned and without the heads
2 beef tomatoes cut in cubes
7 cloves of garlic cut in two or three pieces
Handful of Basil leaves cut in half
2 tbsp oregano (fresh or dried)
Extra Virgin Olive Oil
Preheat oven in 200 degrees Celsius
Wash the fish and place it in a strainer with some salt to absorb the liquids
Place the fish in an oiled dish and arrange them evenly so not to overlap.
Spread on top pepper, garlic and herbs.
Place in the middle of the oven.
After 10min add the tomatoes evenly spread on the top.
Check the food after 10-15 min.
Depending the size of the fish and the oven this dish should be ready in 25-40 min.
Serve with Extra Virgin Olive Oil, freshly squeezed lemon, good quality bread and white wine.
