Walnut cake is found all around Greece and is a speciality in mountainous villages where walnut trees are in abudance. Wanut cake usually accompanies a greek coffee.
This recipe is dairy free, and can be eaten during lent where we Greeks don't eat meat or dairy products, suitable for vegeterians and vegans.
300 gr flour
160 gr olive oil
160 gr fresh orange juice
170 gr sugar
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
200 gr walnuts roughly cut
In a large bowl whisk the sugar with olive oil and orange juice until the sugar is melted. Add the rest of the ingredients and mix by hand. In a greased 24cm diameter cake pan add the mixture and cook in a pre-heated oven in 180degrees for 40-45minutes
OPTIONAL: In Greece you find the Walnut cake finished with syrup.
To make the syrup:
500gr water, 500gr sugar, juice and skin of 1/2 unwaxed lemon, 2 tablespoons cognac
Place all the ingredients in a pot and slowly bring to boil and simmer for 5min. Let it cook a little, while the cake is still in the pan cut it in pieces and poor slowly over the syrup. Let it cook completely and enjoy!
