Baked Cod with Greens,
Bakaliaros sto fourno me horta (Μπακαλιαρος στο φουρνο με χορτα)

This is my favourite way to eat fish during the winter months and is a variation of Vefa Alexiadou's books 'Greece- The Cookbook'.
INGREDIENTS (for 4 people)
4 portions of Cod (approximately 500gr)
600gr spinach or kale or mixture of both (works also with frozen)
6 cloves of garlic sliced
1 bunch of chopped scallions
Various chopped herbs like dill, parsley, fennel (optional)
220Trees Extra Virgin Olive Oil
Salt and pepper
2 big tomatoes cut in thick slices
Preheat oven in 180 degrees Celsius
Heat Olive Oil in a pot, add the scallions and cook for a few minutes until soft, add the greens and herbs and cook for a 2 more minutes. If the greens are frozen you need to cook for longer until they defrost and then add the herbs. Add salt and pepper.
Spread the mixture over the base of an ovenproof dish, place the pieces of cod on top, spring some Olive Oil, place the slices of garlic and tomatoes and finish with some more pepper.
Cook the dish in the middle of the oven for 40 -60min until cooked.
Serve with boiled new potatoes and enjoy!
Serve with Extra Virgin Olive Oil, freshly squeezed lemon, good quality bread and white wine.
